The Omakase philosophy
An invitation to absolute trust
Beyond the classic tables of the restaurant, we have reserved an intimate space of just 6 seats at our Sushi Bar. An exclusive setting where the distance between the Chef and you disappears entirely, making room for the gastronomic spectacle and direct dialogue.
Omakase means, above all: “I leave it in the Chef’s hands.” It is not simply a lunch or a dinner, but an act of absolute trust, in which the guest steps away from choice and lets themselves be guided by the vision, inspiration and craft of the person before them.
When you choose the Omakase experience, you do not order from a fixed list of dishes — you enter a culinary journey created and led entirely by Chef Sorin. The menu comes to life each day around the Japanese concept of Shun, using only the finest fresh catch and ingredients at their seasonal peak.
Seated directly in front of Chef Sorin at the Sushi Bar, you will discover a journey of 14 courses, dessert included, presented and explained by the Chef, piece by piece.
I leave it in the Chef’s hands
The path of 14 courses signed by Chef Sorin
The experience brings together 14 courses (dessert included), whose selection and sequence change constantly with the season and the inspiration of the day. The story and details of each plate are revealed during service, directly by the Chef.
01. Otsumami
Small, delicate dishes created especially to open the meal.
02. Nigiri
Hand-shaped sushi pieces served progressively, in the rhythm set by the Chef.
03. Closing
The final moments of the culinary journey, composed by the Chef to round out the experience of 14 courses.
Menu & drink selection
Experiences & fine pairings
Each option is built on the full progression of 14 courses (dessert included). For a complete experience, the menu can be complemented with carefully chosen sake, wine or sparkling wines, in harmony with the rhythm of service.

“I leave it in the Chef’s hands”
By definition, Omakase means trust in Chef Sorin’s selection. Because the 14 courses are chosen on the day and presented at the Sushi Bar, the menu cannot be significantly altered during service.
